Danish  fødselsdags boller (Birthday buns) Recipe
 quantity 24 rolls

 Ingredients:
  •  200ml milk
  • 50g fresh yeast ( Can be found in most healthfood shops)
  • 100g butter
  • 50g sugar
  • 1 / 2 teaspoon cardamom
  • 1 teaspoon salt
  • 1 egg
  • 500g flour
  • 100g raisins (can add if you like raisins in your house)
  • 1 beaten egg for brushing
 How to make the Buns;
Heat the milk with the butter until it is lukewarm. Dissolve the yeast in the milk and melted butter.Add the rest of the ingredients and knead well (with your hands) until the dough isn't too sticky and has a smooth surface. Put the dough back in the bowl and allow it rise for 30 minutes somewhere warm.
Divide the dough into 2 and form 12 balls of each half. Arrange the buns on 2 baking trays. Leave the buns raise again to about double size (approximately 30 minutes)
Brush with the beaten egg.
Bake at 200 degrees Celsius in the middle of oven for 10 to 12 minutes
And that is how we make these delicious buns which are great for afternoon tea or pack lunches or as me and Emmie do it;
With butter and homemade strawberry jam,
